Had a bit of problem with chest pains and hopefully start cardiac rehab on 18/07/2007 doing two hours physiotherapy a week for eight weeks.

Lamb Satay
Use meat of your choice or thickly diced veg that does not mash on cooking
to every 1lb of mouthful size chunks of meat cut to the same size: Ready spices:
1 tsp cumin, 1 tsp coriander, 1 tsp aniseed, 1/2 tsp ginger, 1/4 tsp turmeric, cayenne pepper to taste, sugar to taste,1/2 jar peanut butter, dash of soya sauce,chopped onions and crushed garlic to taste.1 splash of vegetable oil to wet ingredients.Some people are allergic to different ingredients so check before you offer them food for consumption. Marinade and cover the ingredients in the bottom of fridge for a minimum ff two hours. Thread marinaded meat on skewers and cook on BBQ or under grill or oven till cooked. Serve with pineapple sauce made from chopped onions fried in small amount of veg oil ,add 1/2 jar peanut butter and equal amount of pineapple pieces.The juice of the pineapple. Add sugar and vinegar to make sweet/sour taste .Add chilli and a dash of soya to your taste.Reduce liquid to your desired thickness and if too thick add more pineapple juice.Serve this with boiled or fried rice or both. Have plenty of freshly chopped cucumber, onions and tomatoes plus wedges of lime or lemon or oranges or papaya or what ever is going. So much for the diet! but make this a special (or some thing of your choice every time you loose 4lbs

Breakfast and Supper
I always share a bowl of porridge oat with the family.The quantities I use are: 1 cup of porridge oats to 2 and a half cups of semi skimmed milk or milk and water mixed.In a microwaveable deep bowl I cook full power 4-6 minutes depending on oven wattage. Stir and cook for another 4 minutes. Carefully because porridge will now be very hot test to see if cooked, if not keep cooking at a bout 15 seconds at a time on full power till cooked to your standard. Remember to remove spoon from bowl whilst cooking. Serve with a healthy topping of your choice.
You can cook porridge in a pan on the hob but best use water and stir to stop sticking.Some people use seasoning in preference to sweeteners, so every one to their own. Some people North of England have different ideas on porridge as I found out whilst a cook in the Royal Air Force

Tom's Mince and Mash
Please note that my food recipes and ingredients are purely what I and my family like:
Adjust the quantities to amount to how many people eating and selection of ingredients to your taste. If vegetarian omit the the frozen mince and use a vegetable stock cube
Frozen lean mince of your choice. Small amount of non-soak pearl barley
Chopped onion, celery, carrot, turnip, parnip, sweede, mushroom, brocolli, ground black or white pepper, paprika , tomato purree and a pinch of mix herbs plus a stock cube. I do not add any salt as this is in the stock cube.I just cover all the ingredients a some stock (cold water) and gently bring to boil whilst stirring all the time. Using a spoon or ladel keep skimming the top of your liquid and carefully remove any scum or fat. Whilst the above ingredients are simmering , peel, chop and boil some potatoes. Mash the potatoes and add some semi skimmed milk, and pro active type spread. If you wish, keep some of the mash seperate and you can add an egg or grated cheese for a friend or partner who is not on a diet. When the mince ingredients are cooked you can either thicken with gravy granuels of your choice or mix a spoon of cornflour and water to a smooth paste and slowly stir into the simmering mince ingredients to required thickness has reached. Place mince mix in oven proof dish (for your sort of oven) and spoon on the mash potatoes. Smooth potatoes flat and decorate with a fork or palet knife. Brush with semmi skimmed milk and brown in hot oven. Serve.
Add curry powder or chilli whilst cooking mince and serve with rice or spaggheti, or just plain bread and pullit. Or use jacket potatoes, the choice is endless but just keep the fat and too much salt out.

Since having two mini strokes plus 4 stents fitted into the arteries supplying the heart, I have decided to try knocking up some tasty food to keep my hunger stemmed but at the same time provide weight loss at a comfortable rate that I can handle.
